Brown County Inn, 51 State Road 46 East: One critical violation, to be corrected now: Salad bar items reading over 41 degrees F — pasta salad 51 degrees, potato salad 50 degrees, coleslaw 53 degrees, ham 50 degrees, bleu cheese dressing 51 degrees. Using time as temperature control, all to be discarded at 4 p.m. Unit to be turned down and temperature checked before refilling. One non-critical violation, to be corrected now: Air intake vents over east side prep table have dust buildup. Dishwasher temperature reached 180 degrees as per test strip on final rinse (attached to original inspection paper). (routine)

Four non-critical violations: Hair restraints such as hats or hair coverings or hairnets are to be worn that effectively keep hair from contacting exposed food, clean equipment, unwrapped single service and single-use articles; freezer product stored on floor, repeat violation; dust on ice machine compressor vents, all to be corrected now; seal on Kenmore chest freezer deteriorating, to be corrected by Jan. 15.
