Johnny’s Grub to Go truck to move into downtown lot

A new restaurant rolled into town this weekend — literally.

Johnny’s Grub to Go brought their original food truck to the Foxfire Parking Lot on Van Buren Street and set up shop to serve downtown Nashville.

Owners John and Ginger Knight hope to provide a unique option to the choices available to tourists and locals.

The 20-foot food trailer serves Filipino food exclusively, different than their location at Knight’s Corner on State Road 46 West, which serves both Filipino and American cuisine.

The larger Johnny’s Grub to Go trailer in Belmont will stay where it is.

“I see it more as a weekday place for people that work there,” John Knight said about the food truck in town. “Tourists normally want to go to places like the Hobnob. They’ve got their meals and their days planned.” Providing this option, Knight says that they will have “stuff nobody else has.”

Knight said that when his grandfather and father began the business, they had American eats. “I didn’t think about the uniqueness of the food,” he said. “It’s done well for (Ginger). It started out as a hobby, watching ‘Food Network’ and ‘Food Truck Wars.’”

Her hobby has turned into a good bit of work, now needing several employees to feed customers.

“We’ve got a group that’s going to run it,” Knight said. A mother and her two sons will prepare the food and serve customers in the lot.

Patrons who are first responders — police, firefighters, EMTs, nurses and more — will be able to eat at half the price, all the time.

Opening a location in town is something they’d thought about doing. Knight said people told them, “You need to be in Nashville!”

“We hope everybody is excited,” he said. “We’re excited.”

Hours: 10 a.m. to 3 p.m. Wednesdays through Sundays, possibly expanding to seven days a week in September and October
